The ingredients needed to cook Gongura (Ambadi) pickle/chutney:

  1. Prepare 3tbsp- of gingelly oil.
  2. Use 1tsp- of mustard seeds.
  3. Prepare Pinch of - heeng.
  4. Prepare 1tsp- of cumin seeds.
  5. Prepare 1tsp of - coriander seeds.
  6. Get 2tbsp of - Chana dal.
  7. Take 2tbsp- of urad dal.
  8. Provide 2tbsp of - daalia.
  9. Use 2-3tbsp of - groundnuts.
  10. Take 4 of pieces-dried red chillies.
  11. You need 5 of pieces- small garlic cloves.
  12. Get 1 of medium size- diced onion.
  13. Get 5-6cup of - gongura/ambadi/sorrel leaves (washed and pat dried).
  14. Use 1/2tsp of - turmeric.
  15. Provide as per taste of Salt.
  16. Use 1tsp of - tamarind paste.

Instructions to make Gongura (Ambadi) pickle/chutney:

  1. Heat the oil in a pan and add everything in list of ingredients one after another mixing and sautéing leaving out gongura leaves..
  2. Sauté till light brown and then add the leaves.. It will take less then a minute for leaves to shrink and change it's color.
  3. Now, add turmeric, salt and tamarind paste and stir and mix well for a minute on medium flame. Set aside for it too cool completely..
  4. Coarsely grind the ingredients using as lil water needed to churn..
  5. And voila, Gongura/Ambadi/Sorrel Leaves chutney/pickle ready..

Since this keerai is sour, there is no need to use tamarind for this recipe. This delicious chutney can be stored in the refrigerator for a week. Gongura Pachadi (pickle) is a very popular & authentic dish in Andhra Cuisine. Its made of fresh Gongura leaves and spices.
